Joris Bijdendijk is the executive chef of Amsterdam’s Michelin-starred restaurants RIJKS and Wils, as well as Wils Bakery Café. Known for blending French technique with Dutch soul, he’s the author of several acclaimed cookbooks. Samuel Levie is a chef, sausage maker, and writer whose mission is simple: to make the world a little more joyful, one bite at a time. He co-founded the charcuterie brand Brandt & Levie and has been a food writer for Het Parool for more than a decade.
